Cooking with Anita Marcela: Chocolate Whoopie Cookies with Vanilla Buttercream Filling
The classic Oreo cookies but made with the love of homemade food.
Cooks in 60 minutes approx.
Serves 10-20 cookies
What you’ll need //
- 1 cup of unsalted butter
- 3/4 cups of sugar
- 1 teaspoon of vanilla
- 1 cup of melted dark chocolate
- 1 egg
- 1 ½ cup of all-purpose flour
- ¾ cups of cocoa
- 1 teaspoon of salt
- ½ teaspoon of baking soda
- ½ cup of butter
- 1 ⅔ cup of powdered sugar
- 1 tablespoon of whole milk
Mix the butter, sugar, vanilla and melted dark chocolate—when it’s cooled, and an egg.
Add the wheat flour, cocoa, salt, and baking soda. Leave the mixture to sit for an hour.
Then, put the mixture in the freezer for two hours.
Pre-heat the oven to 325F. Take out the cookies and cut them, then put them on a tray with waxed paper and bake them for 15 to 20 minutes.
Prepare the icing beating the butter, the powdered sugar, vanilla, and milk. Once the cookies are cold, fill them with the icing.
