Cooking with Anita Marcela: Chocolate and Peanut Butter Cupcakes

Cupcakes have a special advantage: you can turn any cake recipe into cupcakes, baking them in individual portions. The ideal way to do it is using cupcake liners or baking cups, which are very practical when baking and serving, and help to keep the cupcakes fresh and humid. For these cupcakes we will use a recipe that is very similar to the chocolate cake and we’ll bake it using the cupcake liners or baking cups.

Peanut Butter Chocolate Cupcake

Kids love cupcakes and they’re one of the favorite option for birthday parties. They can be prepared a day before the celebration and keep them in an airtight place. 

When you prepare these cupcakes it is important that you have all the ingredients at room temperature. Let's get to work!

Serves 12 cupcakes

Cooks in 60 minutes

What you’ll need //

  • 50 gr. dark chocolate or semi-sweet
  • ¼ cup of whole milk
  • ½ cup brown sugar
  • 1 egg yolk
  • ¼ cup of salted butter
  • ½ cup of sugar
  • 1 egg, split egg yolk from the white egg
  • 1 cup of all-purpose flour
  • ½ teaspoon baking soda
  • 1 pinch of salt
  • ¼ cup of milk
  • 2 tablespoon of water
  • 1 teaspoon vanilla

Instructions //

Preheat the oven to 350F and prepare the cupcake mold by placing the cupcake liners.

In a small pot, in Bain-Marie, melt the chocolate, with milk, brown sugar and the egg yolk. Once the mixture is homogeneous and thick, remove from the heat and leave it to cool down.

In a separate bowl, mix the butter until it’s smooth and creamy, add the sugar and an egg yolk. Add flour, baking soda and salt, and continue beating. Add milk, water and vanilla. Add the chocolate mixture melted at the beginning.

In a different bowl, beat the egg whites in the mixer, at high speed until soft peaks form.

Add the egg white to the cupcake mix, mixing it in an enveloping way.

Place the mixture in the baking cups and put it on the oven for 15 to 20 minutes.

To make the frosting, mix the butter until smooth and it’s creamy. Add the powdered sugar, salt, vanilla and milk, peanut butter and cocoa powder. Mix at medium speed until you get a creamy texture.

Add the cream to the cupcakes and decor them with mini marshmallows, peanuts and chocolate chips. And of course, the Merry Monday toppers to give them a touch of joy and celebration.
