Cooking with Anita Marcela: Easter Lemon Cupcakes with Marshmallow frosting

If you're looking for an easy-to-serve dessert that all guests like, cupcakes are your best choice. In addition to being very practical because they serve individual and do not need dishes and spoons to eat, they are also a very easy dessert to personalize for the holidays. You only have to choose your favorite wrappers according to the holiday or special occasion. You can even use white ones and then add sprinkles of colors that go best with the decoration of the party. Cupcakes brighten up any meeting or celebration!

You can transform any cake recipe or pound cake into cupcakes when baking them in cupcake molds using cupcake liners or wrappers. This is why the variety of flavors is infinite, and you can also play with the combination of the cake, filling and the frosting to decorate.

Cooks in 60 minutes

Serves 12 cupcakes approx.

What you'll need //

  • 1 cup unsalted butter
  • 2 cups of sugar 
  • 5 eggs 
  • 3 cups of all-purpose flour
  • 1/2 teaspoon baking soda 
  • 1 teaspoon salt 
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 1 tablespoon lemon zest 
  • 1 tablespoon lemon juice 

Instructions //

Preheat the oven to 350F and prepare a cupcake baking pan with the liners or cupcake wrappers.

Soften the butter with the mixer. Then add the sugar and continue beating. Add the eggs one by one. When incorporating, add flour, baking powder, salt, lemon zest, and vanilla. Then add the milk and lemon juice and continue beating. Mix well until everything integrates. Pour the mixture into the cupcake liner or baking pan, filling up to two-thirds of each space, as they will grow when the oven ends.

Bake for 25 minutes or until you insert a wooden stick in the middle of one of the cupcakes, it comes out clean. Expect to cool for at least 5 minutes in the mold before getting them out.
