Summer Pool Party Menu with Kids by Anita Marcel
Summer season brings many opportunities to enjoy the days at the beach and the pool with your children. Sometimes only the idea of planning the menu paralyzes us, but it is very easy to make healthy and tasty things at home. Here, I leave you an ideal menu for lunch or snacks in the pool.
Turkey and cheese sandwiches with cream cheese, although these are the typical square bread sandwiches, you can give them a special touch by cutting them with a cookie cutter and adding Merry Monday toppers to make them more cheerful and attractive to children.
Prepare or buy chips to accompany the sandwiches. I like to make banana, cassava or pita chips, they're healthier and delicious. To make the homemade pita chips, cut pita bread into triangles, put some olive oil and rosemary and bake them at 400F until they get a golden look. Sprinkle a pinch of salt, and store in an airtight container until serving.
Another recipe I really like to make when going to the beach or serve in the pool is the pasta salad. I make it with farfalle pasta. With a one-pound box you can feed up to 8 people. Prepare the pasta according to the packaging instructions. In the meantime, marinate between 6 and 8 tomatoes with a little olive oil, lemon, salt and pepper. When the pasta is cold, add the tomatoes, 2 cups of mozzarella cheese in squares and 1/2 cup basil finely cut. Keep refrigerated until serving time.
When considering fruits, I suggest to bring apples, bananas, grapes and clementines since they are the easiest and more convenient to eat. If you have a little more time you can cut some strawberries and mix them with blueberries and raspberries, serve them in transparent cups and they look like mini fruit salads.
For drinks, I like to bring lemonade since it is a refreshing drink and ideal when is hot outside. If you want to give it a sweet and special touch you can prepare "papelon with lemon", a traditional Venezuelan beverage made with raw sugar cane and lemon.
In a jar dissolve the "raw sugar cane" (papelon) in two liters of water. Wait 20 to 30 minutes for the panel to dissolve and stir. Squeeze 12 lemons and add the juice from the lemons to the jar. Stir and taste. If you go to the beach and prefer something more practical, you can buy the individuals size organic fruit toe.
For a snack or for dessert, you can bring some blondies. These should be prepared from the day before and if you take them to the beach, put them in an airtight container or in disposable bag. Add a layers of waxed paper in between so that they do not stick with the heat.
When I prepare food to go to the beach, I always do a mental checklist so that I do not forget to bring: napkins, glasses, plastic cutlery and garbage bag.
For both the beach and the pool, do not forget to include a lot of water and sunscreen.
